The Best Chocolate Chip Cookies...Ever

This recipe was entered in The Foodista Best of Food Blogs Cookbook contest, a compilation of the world’s best food blogs which was published in Fall 2010.

Ingredients

1 cup butter, softened
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 bag (or less if you're like me) of semi-sweet chocolate chips

Preparation

Preheat oven to 375°.

Beat butter at medium speed in a heavy-duty mixer until creamy. Gradually add sugars and beat well. Add eggs and vanilla, beating well.

In a separate bowl, combine flour, baking powder, baking soda, and salt. Gradually add to butter mixture and beat well.

Process oats in a food processor until finely ground. Add to butter mixture and beat well. Stir in chocolates and pecans.

Drop cookies by tablespoonfuls onto ungreased baking sheets. Bake for 8-10 minutes or until lightly browned. Cool slightly on baking sheets. Then, remove to wire racks to cool completely.

No, seriously. Ever.

I'm picky about homemade chocolate chip cookies. I don't like too many chocolate chips (my husband prefers an abundance in every bite), and I want them to be chewy and dense (while my husband likes them flat and crispy on the outside, and practically raw in the middle). It's amazing that we're still married.

So. I found the perfect cookie recipe. You might not like it. But I happen to feel the need to sing out of key after every bite. They are just that good. In fact, the dough was probably the best part. I couldn't keep my testing spoon (yes, I have testing spoon) out of the bowl.

You'll need a food processor. Or a happy neighbor with a food processor. Or a place that sells ground up oatmeal. *shrugs*

Yep. Oatmeal. Totally awesome. It adds a wonderful dense-ness to the cookie, and some great flavor. And since it's ground up, you don't realize you're eating an oatmeal cookie....but you are. And it will make you ask questions to yourself. You'll wonder what the hell it is that is making this cookie so much more delicious than it's chocolate chip cookie cousins. Oatmeal. Simple. Fantastic.
