Avocado and Orange Salad With Orange-Ginger Dressing

4 ripe avocados, cut into long strips
3 large oranges, segmented
2 green onions, cut finely
For the dressing:
3 tablespoons orange juice
1/2 teaspoon fresh ginger paste
1 teaspoon agave syrup
3 tablespoons olive oil
salt and pepper to taste

Arrange the avocado and orange slices overlapping each other on a platter. Squeeze over the juice from the orange left after segmenting the pieces.
Sprinkle over the spring onions and some salt over the salad. Cover with cling film and refrigerate until ready to serve.
Blend all the dressing ingredients together. Season to taste with salt and pepper. Before serving pour the dressing over the salad.

For an added kick you can sprinkle over some dried chilli flakes or add a squirt of Sriracha to the dressing. Ripe mangoes also make a good addition for a touch of colour and higher nutritional value as well. The salad can also be eaten fresh without being refrigerated.
