Chilled Cucumber-Yogurt Raita

Ingredients

3 cucumbers, finely diced
4 cloves garlic, minced
1/4 cup blend mix of olive and veggetable or canola oil
4 cups cold water
salt& pepper to taste

Preparation

Add all ingredients in a bowl, except the cold water and dill. Now add some salt and pepper and a pinch of nutmeg, mix well and taste. At this point cover and put back in the fridge.

Once you are ready to serve, dilute with cold water to your desire consistency and then sprinkle with fresh chopped dill or parsley.

I like serving the soup with hot baguette out of the oven.

If I don't have dill, you can use parsley or cilantro (coriander fresh).
