Supreme Carrot Cake

Ingredients

2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
2 cups sugar
3/4 cup oil
3/4 cup buttermilk
2 teaspoons vanilla
1 (8oz.) can crushed pineapple, drained
3 ounces coconut flakes
1 cup pecans, chopped

Preparation

Grease and flour 3 round cake pans.

Stir together first 4 ingredients. Set aside.

Beat eggs and next 4 ingredients at medium speed until smooth. Add flour mixture, beating at a low speed until blended.

Fold in carrots and next 3 ingredients.

Pour batter into pans.

Bake at 350 for 25-30 minutes.

Cool completely and frost in between layers and on top and sides with cream cheese icing.
