Black Bean, Salsa and Cheddar Taquitos with an Avocado Dipping Sauce

corn tortilla
shredded sharp white cheddar
canned black beans, rinsed & drained
1 avocado
1 Tbsp finely chopped red onion
1/4 cup light sour cream
1 tsp garlic powder
1/2 tsp chili powder
salt to taste

Preheat your oven to 385 degrees.
Lay out a corn tortilla {NOTE: if they aren't pliable, no big deal. Simply warm slightly in a pan before filling}. Add a small amount of shredded cheddar, a little salsa, some black beans and a couple pieces of scallion.
Roll up the tortillas nice and tight and place seam side down on a parchment lined baking sheet. Bake for 15 minutes.
For the dipping sauce. Mash the avocado in a bowl. Stir in the red onion, garlic powder, chili powder, salt and sour cream.
