Frosted Coffee Nibbles

1 cup butter, softened
½ cup confectioners’ sugar
1 teaspoon vanilla extract
1 tablespoon strong brewed coffee
2¼ cups all purpose flour
¼ teaspoon salt
Coffee and Cream Glaze:
1 cup powdered sugar
1 tablespoon strong brewed coffee
1 tablespoon half and half (cream)
¼ cup famous chocolate wafers, crushed

Preheat oven to 350° F.
In a large bowl, cream the butter with the confectioners' sugar, vanilla and coffee with a hand mixer. Mix in the flour and salt and combine well. Press the crumbly dough into a Silicone Brownie Square Baking Mold Pan square, filling each about ¾ full. Place a cookie sheet under the mold to cook in the oven.
Bake until bottoms are slightly golden, about 15 minutes. Do not over bake. Let cool in the pan for 20 minutes. When cool enough to handle, remove each cookie from the mold and place on a cooling rack placed over a cookie sheet.
In a small bowl, whisk together the powdered sugar, coffee and cream until smooth. Using the whisk, drizzle the glaze over each cookie and then decorate with the chocolate wafer crumbs. Let set for 20 minutes until glaze is firm.

Frosted Coffee Nibbles are the perfect melt-in-your-mouth coffee and cream cookies that are packed with flavor! An after dinner dessert all adults will love.
