Veggie Lentil Soup

Ingredients

3/4 cup lentils
2 1/2 cups vegetable stock
1 cup water
1/4 cup dry red wine
1 pound tomatoes, skinned and seeded
1 carrot, sliced
1 celery stalk, sliced
1 garlic clove, minced
1 onion, chopped
2 teaspoons tsp fresh chopped basil or ½ dried
6 tablespoons grated Parmesan

Preparation

Combine all ingredients in a large pot. Bring to a boil then reduce the heat to low and allow to simmer for 20-25 minutes. Stir occasionally. Fish out the bay leaf, add in cheese and serve.
