Cream Filling
Ingredients
3/4 cup sugar
          2 eggs
          1/3 cup flour
          2 cups scalded milk
          1/8 teaspoon salt
          1 teaspoon vanilla or
          1/2 teaspoon lemon extract
      Preparation

Beat eggyolks.

Mix dry ingredients, add slightly beaten egg. Stir in enough milk to make a thin paste, and add to the remaining milk in the top of a double boiler.

Cook for 5 minutes, while constantly stirring with a whisk to avoid lumps.

Reduce heat slightly and cook for another 10 minutes or until the mixture has thickened, stirring continuously.

Remove top pan from the double boiler and set pan on a heat proof pad to cool. Stir in butter. Cool for 5 minutes and stir in vanilla.
