Fideos

About

Fideos are thin noodles, like cappelini, that are toasted in the oven before further cooking. They are popular in Spain, and Sfardic Jewish cuisine.

'Fideos', portuguese for Spanish 'fidellos' or 'fidellos tostados' - are most commonly toasted in a slightly greasedpan (one tbsp plain / olive oil) possibly with a finely minced onion. Then water or chichen stock is poured over and to the boil. At this stage further ingredients may be added [tomato sauce, meat, etc.] for a 15 min 'steaming' [vapor slowy rising from mix covered with a lid]. Toast & Steam as in pilaf / pilaw rice cooking.
