Japanese Mayonnaise

Ingredients

1/2 cup Canola oil
1 tablespoon Miso
1 pinch Salt
1 pinch White Pepper

Preparation

Separate the egg whites from the egg yolks

Beating the eggs vigorously with a set of chopsticks.

Slowly add the oil to the eggs one drop at a time while beating the egg.

Once oil is gone add the miso, salt, and pepper. Continue to beat.

Hi, What type of miso you use.

You need to use Shiromiso or the white miso. It is light (golden yellow to medium brown in color) and slightly sweeter than the Akamiso or red miso which is dark and reddish brown in color. Akamiso is also stronger and saltier.

You can use Sesame Tahini and light soy sauce as a substitute for Miso.
