The Best Steak Sandwich

I had some steaks leftover from dinner the night before, a rarity in my house, and decided to make these sandwiches for lunch.  They were super easy with leftover strips of steak but would also be a snap if made from scratch.  When purchasing a steak for this sandwich, there is no need for a filet mignon here.  I prefer using a New York strip or flank steak.  To achieve tenderness in lesser cuts of meat, make sure to cut against the strips against the grain (the opposing way of the meat fibers).  This recipe is perfect for a decadent lunch or dinner, guaranteed to be devoured.

Steak Sandwich

Ingredients:

1 (12-ounce) 1-inch thick steak
Kosher salt
Freshly ground black pepper
2 1/2 tablespoons Olive oil
2 yellow onions, sliced in rings
1/2 teaspoon fresh thyme leaves
3/4 cup good mayonnaise
1 tablespoon Dijon mustard
1 tablespoon whole-grain mustard
2 tablespoons sour cream
1/8 teaspoon salt
4 sub rolls
1/2 cup baby arugula
