These creamy mint chocolate fudgsicles have a bright peppermint flavor that compliments its dark chocolate coating.  The vegan ice cream base is made with a combination of avocados, coconut milk, honey and vanilla extract for flavor.  If you want an extra layer of chocolate, feel free to add some chopped chocolate to the base as well.
