3 Irresistible Chocolatey Ice Cream Bars

A multitude of ice cream bars line the frozen case at your local grocery store.  Most of them have one element in common - a chestnut brown chocolate coating.  Some may be dipped in buts while others are concealing a sweet surprise but the ubiquitous layer of chocolate.  Ice cream bars are a snap to make at home so long as you have a good mold and have the ability to melt chocolate.  These three irresistible ice cream bars are a summertime treat you don't want to miss.

These creamy mint chocolate fudgsicles have a bright peppermint flavor that compliments its dark chocolate coating.  The vegan ice cream base is made with a combination of avocados, coconut milk, honey and vanilla extract for flavor.  If you want an extra layer of chocolate, feel free to add some chopped chocolate to the base as well.

These double chocolate ice cream bars use your favorite store bought brand and doctor them up with various yummy toppings.  This version is rolled in Oreo cookie crumbs, drizzle in fudge sauce and topped with whipped cream and sprinkles.
