Surimi is a Japanese word that refers to any food product that mimics or imitates the meat of another food, most commonly, the meat of lobster, crab and other shellfish. Surimi is made of white-fleshed fish (pollock or hake) that is ground into a paste, flavored, and shaped to imitate the appearance of the meat. The Surimi process is also used in the making of Turkey products like turkey burgers, turkey sausage, turkey salami.
