'' Bay leaf (plural bay leaves) refers to the aromatic leaf of the Bay Laurel (Laurus nobilis, Lauraceae). Fresh or dried bay leaves are used in cooking for their distinctive flavor and fragrance in Mexican food, one example is Red Snapper Veracruzana. The leaves are often used to flavor soups, stews, braises and pâtés in Mediterranean Cuisine. The fresh leaves are very mild and do not develop their full flavor until several weeks after picking and drying.

Bay Leaves are obtained from the Bay tree, an evergreen plant whose leaves can be picked year round. These leaves are usually dried and the flavorful oils which they contain are used to impart a unique taste to teas, soups, stews and casseroles.

Crushed bay leaf applied to the skin is believed to be very useful in speeding the healing process of burns and bruises.
