Introduced in Dresden, Germany, the Pinova Apple is a new variety of apple that with its ability to retain its crunch texture for many months, allows its keep its flavors even in long periods in storage.

Physical Description

Pinova-apples are striped and have a dark red blush across a yellow-range skin. The fruit is round or slightly cone-shaped and compact.
The flesh is bright white.

Selecting and Buying

Seasonality: january, opctober, november, december

Choosing: Look for pinova-apples that are firm, and heavy by holding them in the palm of your hand. The skin should be clear and taut, with good color.
Avoid if the skin is bruised or blemished, and if the skin wrinkles when you rub your thumb across it.
Buying: Pinova apples (Pinata or Corali), are available at most chain grocery stores.

Preparation and Use

Pinova apples are suitable for poaching, roasting, saucing, juicing, or canning. As well as for pies and cakes, or raw.

Cleaning: Gently clean the outside of the apple when you bring them home from the market. This will remove unwanted wax, and potential pesticides.
When you're ready to cook your apple, clean them according to your recipe (coring, peeling, quartering, etc.).

Conserving and Storing

Pinova-apples store extremely well when kept cold (around 30 degrees f), their flavor actually improves.
The pinova can be cooked/canned/juiced like any other apple.

Social/Political

History: The pinova is a relatively new breed of apple that is said to be a cross between European varieties including Crox Orange Pippin and Duchess of Oldenburg.
Apples are among the most widely available fruits nationwide, and the most versatile.
