Raschera

An Italian semi-hard cheese that has a delicate flavor. It is slightly spicy and salty as it ages. The texture is elastic with small, irregular holes throughout the cheese. It is usually white or slightly off-white. It is traditionally a table cheese but is also used in risottos or salads.
