Salers Cheese

About

Salers is a traditional, farmhouse, unpasteurized, hard cheese. It is often confused with Cantal. It has a hard, brown, natural rind that becomes rough and crusty with age. The rich yellow interior has the aroma of dandelions and fresh green grass. It has a nutty taste and a strong, raw-onion bite. Salers must be made only from the milk of cows that graze on mountain pastures in the summer. Cantal can be made from the milk of other seasons. In the Salers region mountains are covered with snow half the year which gives the summer grasses a special richness.
