Selles-Sur-Cher Cheese

Selles-sur-Cher is a French goat's milk cheese. The central pte is typical of goats cheese, rigid and heavy at first, then moist and soft. Its taste is lightly salty. The exterior is dry with a grey-blue mold covering its surface and has a musty odor.
