Serra da Estrela Cheese is a cheese from the region of Serra da Estrela, in Portugal. It is made of sheep milk, mostly during the months of November to March. It is notable because the milk is curdled with thistle rennet.

Physical Description

Soft, squishy rounds, wrapped in a cloth strip. About 6 - 7 inches in diameter, 2 inches tall. Weighs about 1 kilo.

Colors: Light, creamy, slightly golden hue.
