Mud Dab

About

Found inshore mostly in New York, Massachusettes and Rhode Island in the winter months. It averages 1 1/2 - 2 pounds. It ranges in color from reddish-brown to olive green. Its flesh is delicate and mildly flavored. It is often baked, poached, steamed or sauteed.
