Totuava

A fish almost driven to extinction in the 1920's and 30's when it was caught for its swim bladder, which was sent to China for use in soups. It has yet to completely recover though it occasionally shows up in fish markets. They can grow up to 80 pounds and are best broiled or barbecued.
