I recently had a chance to try a Sansa at a local orchard that has many varieties of uncommon apples as well as the old favorites. I was not taken by the Sansa. Its flavor was rather bland and unexciting. I much prefer the ancestor, the Gala, over the Sansa.

Yesterday, I tried the Sansa apple for the first time. I found it crisp, with a sweet/tart flavor. I made some of the apples into an apple crisp and it held it's shape with just the right "snap", when I sampled it, still warm.
Even though some may think this apple to be a bit bland, my experience was different, and I found the apples aromatic and lovely to eat just at room temperature.
