Mayfair Salad Dressing, which is similar to Caesar Dressing, was created at the Mayfair Hotel in St. Louis by head chef Chef Angelo Rossini and consists of oil, eggs, anchovies, garlic, mustard, celery, onion, champagne and black pepper.

Selecting and Buying

Choosing: If buying in a bottle, buy a glass bottle that is unopened and not past the expiration date.
Buying: May be able to purchase in St. Louis or online, but is mostly made at home.
Procuring: Made from oil, eggs, anchovies, garlic, mustard, celery, onion, champagne and black pepper.
Preparation and Use
Blanche onion and celery very briefly (5-10 seconds) in boiling water and drain.
Combine everything except eggs and oil in processor and blend for 2 or 3 seconds.
Add egg and blend again.
Then, with processor on, slowly dribble in oil to make creamy mayonnaise type dressing.
Run processor until dressing is very smooth.
Conserving and Storing
This will keep for a week or so if covered tightly and refrigerated.
