The Copper Jewel Sweet Potato is also known as the Jewel Yam. It has a coppery colored skin and is relatively bland in flavor. This type of sweet potato is available year round but their in season is September through March. This is a very versatile vegetable in that it can be baked, fried steamed or used in a variety of recipes such as Sweet Potato bread. One current common trend with the sweet potato is making fries with them. As of 1993 this and the Beauregard variety of sweet potato made up 90%% of the sweet potato crop in the United States alone.
