Leeann Rimes' Recipe For Cabo Chicken

Ingredients

1 cup olive oil
4 large cloves garlic, minced
2 teaspoons crushed red pepper flakes
2 teaspoons salt
8 boneless, skinless chicken breast halves

Preparation

In a bowl whisk together lime juice, oil, garlic, pepper flakes and salt

Divided chicken into 2 resealable plastic bags and pour 1/2 the marinade into each bag

Seal and regrigerate 8 hrs or overnight, turning several times

Heat broiler, setting rack 4 inches from heat or on a gas grill on high

Remove chicken from marinade and discard marinade

Place chicken on grill rack

Broil or grill for 6-7 minutes per side, turning frequently, until meat thermometer reads 170F degrees
