Fudge Brownies With Macadamia Nuts and Ganache Frosting
Ingredients
1 bag (12 oz) semisweet chocolate chips
1/2 cup (½ stick) unsalted butter
3/4 cup sugar
2 eggs
1 cup all purpose flour
1/2 teaspoon cinnamon
2/3 cup plus 3 tablespoons chopped salted macadamis nuts
1 teaspoon vanilla
2 tablespoons heavy cream
Preparation
1
Heat oven to 350. Grease an 8 inch square baking pan.
2
Place 1 cup of the chocolate chips and the butter in a large microwave safe bowl and nuke for 1 minute. Stir until smooth. Nuke another 30 seconds if needed.
3
Whisk in sugar, then eggs. Stir in flour and cinnamon until smooth. Fold in 2/3 cups of the chopped nuts and the vanilla. Transfer batter into prepared pan.
4
Bake at 350 for 25 to 29 minutes
5
While brownies are in oven, in a microwave safe bowl heat heavy cream for 35-55 seconds, until hot. Pour over remaining chocolate chips. Let sit for a minute, then stir until smooth. If not melting, nuke for 20 seconds and then stir until smooth.
6
When you remove brownies from oven drop teaspoons full of the ganache on top. Gently spread until even and without ripping brownies. Then sprinkle the remaining 3 tbsp chopped nuts over and press in gently.
7
Let cool completely. You can put in fridge for an hour. Cut into 16 squares and DEVOUR! :-)
8
NOTE: If you are not a macadamia fan choose a different nut like walnut or pecan. If the nuts are not salted just add 1/4 teaspoon salt with the flour in step 3.
