Baking bread is one of those things that is most satisfying in the kitchen. We go through quite a bit of bread, just considering the amount of toast it takes to feed a crew of 7 in the morning. I like to bake bread once a week and have it last, so this recipe for 6 loaves at a time is just perfect. I call this my Farmers Market Bread, since I can bake two batches and have a dozen loaves on the market table with not much effort.
For market, I also make 6 loaves of multi grain bread by substituting 5 cups of the white flour with Bob's Red Mill 10 Grain Flour.
Please do not be afraid of the lard. It gives the bread a lovely texture, and helps it stay fresh for days. I also like that you can slice the loaves into manageable slices for making sandwiches.
