White Chocolate Raspberry Brie Cups
Ingredients
15 Athens mini phyllo shells
          1.5 oz chopped white chocolate (I shaved mine with a vegetable peeler)
          1.5 oz Brie, chopped (I used Lite Brie Cheese)
          1/4 cup raspberry preserves
          15 raspberries
      Preparation

Preheat oven to 350 degrees.

Line a baking sheet with parchment paper

Place 1 teaspoon white chocolate in bottom of shell. Top with chopped Brie. Add about 1/2 tsp. raspberry preserves on top and bake for 8 minutes.

Remove from oven and top with a left over raspberry jam, place back in oven for 1 minute. Top with a raspberry. Serve hot.

This little dessert is so simple to make the the flavors come together beautifully! I love the sweetness of the chocolate, the saltiness of the brie cheese and the tartness of the raspberries. It would be so perfect for any kind of celebration.
