Roasted Pepper & Caramelized Onion Quinoa Salad


For the Salad
1-1/2 cups quinoa
3 cups water
Dash of salt
3 cups baby spinach
1 yellow onion, coarsely chopped
2 tablespoons olive oil
1/8 cup chicken stock or water
3 cloves garlic, minced
1-1/2 cups roasted bell peppers*, coarsely chopped
¾ cup pitted kalamata olives, chopped into thirds
½ cup walnuts, chopped


Quinoa salad with kalamata olives, spinach, caramelized onion, roasted bell peppers and a zesty dressing
