Grey Sole
About
Found throughout the Gulf of Maine in deeper areas along Georges Bank. It averages 3-4 pounds and 24 inches long. Fillets are usually 4-10 ounces. It is light and sweet with delicate flesh. It is often baked, poached, steamed or sauteed.
