Vegetable Enchiladas Recipe

Ingredients

6 Corn Tortillas
1 Onion, Finely Chopped
4 Clove Garlic, Finely Chopped
1 Green Capsicum, Finely Chopped
2 tsp Ground Cumin
1 can Black Beans Drained and Rinsed
¼ cup Tomato Paste
½ tsp Red Chili Flakes
½ tsp Mix Herbs
1 tsp Sugar
½ tsp Black Pepper
1 tsp Oregano
2 cup Mozzarella Cheese
Few Coriander leaves Finely Chopped
2 tbsp Butter
Salt to taste

Preparation

Step 1: Heat oil in a pan, add onion, garlic, capsicum and sauté it till the onion are softened

Step 2: Combined black beans, chili flakes, mix herbs, cumin and mix well and cook till almost being dry

Step 3: To make sauce toss garlic in butter with tomato paste. Add chili flakes, oregano, sugar, pepper, salt with mozzarella cheese and cook till the mixture turns in to sauce consistency

Step 4: Take a tortilla and spread some of the mixture in the centre and roll it up tightly. Repeat it for rest of the tortillas and pour the remaining sauce over the top

Step 5: Preheat the microwave to 200 degree C. Place tortillas in to ovenproof dish and baked till the cheese melts and sprinkle few chopped parsley leaves. Serve hot
