Watercress Soup (Chinese)

Ingredients
2
chicken thighs
One bunch of
watercress
1 cup
baby carrots,
chopped
1/2 cup
dried red dates,
pitted
1 tablespoon goji berries/wolfberries
5 cups
of
water
Preparation
1
Blanch
chicken in
boiling
water for 2 minutes. Set aside.

Place water in a pot and bring to
boil.

Place chicken,
carrots,
and red dates in pot.

Bring to a
boil
and then
reduce
the
heat
to low. Let it
simmer
for about an hour.

Add watercress leaves and wolfberries.

Continue letting it
simmer
for 20 minutes.
