Southwest Ratatouille

Ingredients

3 inches zucchini, cleaned and chopped into 3 pieces
1/2 sweet onion, chopped
1 red pepper, chopped
1 tablespoon jalapeno, finely chopped
2 cloves of garlic, peeled and chopped
2 Roma tomatoes, cleaned and chopped
2 tablespoons olive oil
1 tablespoon Cumin
1 teaspoon ground Cinnamon
1 tablespoon Tabasco sauce

Place olive oil in saute pan and put burner on medium.

Add garlic and onion and saute about two minutes.

Add the remaining vegetables, turn stove to medium low, and saute for about 12-15 minutes, until vegetables are soft.

About

Ratatouille is a french stewed vegetable dish, traditionally made with zucchini, egg plant, tomatoes, onion, and garlic. Many times herbs, such as bay leaf, thyme, and basil are added as well. This recipe was alittle different, I sauted the traditional vegetables, but without the herbs, and with the addition of some southwestern style spices. The kitchen smelled so wonderful while it was cooking, and it was fresh and delicious to eat!
