Poppy Seed Chicken

Ingredients

4 inches boneless, skinless chicken breasts diced and cooked a pan until white and done
2 cups Sour Cream
1 tablespoon Poppy seads
1/4 cup butter

Preparation

Combine all ingredients in pan and let bubble for a minute or two

Place this in a 9*13"pan

Crush 1 sleeve of Ritz Crackers (and sorry folks, it just doesn't taste right without the real Ritz crackers or something buttery and rich like it--Club crackers or Toll HOuse would work too).

Pour crushed crackers over top of the chicken mixture.

Melt 1/4 c butter and pour over the crushed crackers.

Cook at 350 for about 25 minutes or until bubbly.

Serve over rice.

It tastes divine with green peas and a fresh salad. A fresh loaf of french bread is delightful too.

my friend Aimee gave me this recipe at my begging because it was one of the only things my kids would eat. Since then it's been lovingly and reverently called "Aimee's Chicken." It is an amazing hit with all--young and old.

8 depending on how many are adults vs children
