Baked Mac and Cheese

Ingredients

1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon dry mustard
3 cups milk
1/2 cup yellow onion diced small
bay leaf
1/2 teaspoon paprika
l lg. egg
12 ounces shredded sharp cheddar cheese
l tsp. kosher salt
fresh black pepper
Topping
3 tablespoons butter
1 cup panko bread crumbs

Preparation

Preheat oven to 350

Pot of boiling salted water add pasta follow directions

In a large pot, melt butter add flour and whisk for about 5 min. or so make sure you have not lumps.Stir in milk, bay leaf, onions, paprika and keep whisking

Simmer for about 10 minutes or so.

Remove bay leaf

Temper in the egg.

Stir in about 3/4 of cheese.

Season with salt and pepper

Spray a large baking dish with Pam

Fold in the Macaroni

Pour into baking dish

Sprinkle rest of cheese over this

Make topping

Saute butter with panko crumbs

Spread on top

Bake 30 min or so until nice and brown

You can substitute a mixture of cheeses.
You can use some half and half in place of some of the milk. I like to play around and make it unique
