Picante Pork & Beans

Ingredients

1 Pork Roast (3 lb)
1 can Tomatoes and Green Chilies (15 oz)
5 cups water
Salt and pepper to taste

Preparation

Trim fat from pork roast.

Place roast without browning in crockpot.

Add tomatoes, beans, and water.

Salt & pepper to taste.

Set crockpot on low

Cover and cook for 12 to 16 hours.

Stir occasionally, adding water if necessary.

When done, remove roast, let cool slightly.

Shred, and return to crockpot stirring through beans.

Serve with flour or corn tortillas, chopped lettuce, sliced avacado, chopped tomatoes, diced onions, and sour cream.

Originally received this recipe from my mother. Hers was made with pinto beans and a bone-in pork roast. This recipe is super easy and makes great burritos.
