Monday Night Lasagna
Lasagna is one of my favorite dinners, I guess for me it is more of a comfort food. It is a dish that is simple to make, has a lot of flavors and is always a crowd pleaser.
And I have to admit, Lasagna is cooked at least once a week in our kitchen and there has been times when two of us have eaten an entire tray to ourselves in one helping (normally enough for 4). So what makes my lasagna so special you are asking…
250g Organic minced pork 250g Organic minced meat
2 medium size carrots diced 1 large onion diced
2 cloves garlic chopped up 3 tins tomatoes
Oregano (fresh or dried) Basil (fresh or dried)
Salt and Pepper to taste. 2 x bay leaves
Step by step.
heat some olive oil in a pan on the stove and drop in teh onions and garlic and cook for around 4 mins.
add in the minced meat and pork and brown.
Chuck in the carrots and cook all together for around 4 minutes
Pour in the 3 tins of tomatoes and mix well
Add the herbs and salt and pepper along with two bay leaves and a pinch of sugar mix well and turn the heat down and let all the flours dance around together in your pot for around 20 minutes.
White cheats sauce…..
Ok So with my white sauce I am the biggest cheat in teh world and you are all going to think what the hell but trust me, this is fast, simple and really easy.
What you will need:
250ml fresh cream
2 tablespoon crème fraiche
1tsp powered veggie stock.
Place all ingredients on a bowl, grab a hand whisk and whisk them all together. That’s it, a easy and tasty white sauce…
What else you will need…
1 x 500g pkt Lasagna sheets (instant), 1 pkt grated Gouda and 1 ball mozzarella
Arranging the Lasagna
I start off with drizzling some olive oil in the base of the lasagna dish, they I put in enough bolognaise sauce to cover the bottom of the dish followed by a layer of instant lasagna sheets. I then cover that layer with more bolognaise, then I drizzle some of my white cheats sauce on the bolognaise and add another layer of lasagna sheets, I continue this two times more and on the final layer I put the remanding bolognaise sauce and tip all the white cheats sauce on top followed by one and half hand full’s of grated gouda and then I break up one mozzarella ball put that on top and put in the over for 45 mins at 200 degrees.
