Eggplant Alla Norma

Ingredients

1 med Eggplant
4 large garlic cloves
2 Tablespoons of Olive Oil
1/4 lb Mushrooms
1 Can of Plain Tomato Sauce
1 Large Onion
1 small can of Anchovies
8oz Capers
1 package of Rigatoni (I used the Vegtable Rigatoni)
8oz of Mozzarella Balls
1/4 Cup of Parsley
1/4 Cup of Parm Cheese

Preparation

Peel and cut eggplant into cubes, cut and dice onions, shredded garlic.

Add olive oil to skillet to med high heat, add ingredients.

Cook for about 15 minutes or until you notice eggplant getting softer.

Add Sauce to skillet cook for another 10 minutes.

Then take everything from skillet and add to blender with anchovies. Blend until somewhat smooth.

Pour back to Skillet and add cooked al dente pasta to sauce, mix in capers.

Taste and see if you need salt or pepper, I didnt add anything because anchovies have that salty taste and you can always add red pepper flakes to make things spicy. If you dont like anchovies this is still a great dish without it.

After eveything is in the pot add mozzarella balls and parsely.

Put on plate and add parm cheese. ENJOY!!

This was a recipe that just came to me one day. My husband and I wanted something healthy for dinner, So I decided to make my Version of Eggplant Alla Norma with Mozzarella Balls. I hope everyone enjoys!!
