This recipe was entered in The Foodista Best of Food Blogs Cookbook contest, a compilation of the world’s best food blogs which was published in Fall 2010.

Ingredients

175g unsalted butter, softened
175g caster sugar
3 medium eggs
2 tablespoons milk
250g self raising flour
1 teaspoon vanilla extract

Preparation

Using a wooden spoon or electric whisk, cream the butter and sugar together until light and fluffy.

Lightly beat the eggs with the milk in a separate bowl.

Gradually beat the eggs and milk into the creamed mixture, alternating with the flour

Turn the mixture into prepared tin and level the surface.

Bake in a preheated oven, 160 degree, gas mark 3, for 40 mins, until a skewer, insert in the center, come out cleanly

Leave the cake in the tin for 10 mins then transfer it to a wire rack to cool

About

An easy recipe which can be used for cakes, cupcakes and as a pound cake. The one in the pic has jam filled in between depending on one's preference. Texture is really smooth and emits a strong buttery scent.

16 medium sized cupcakes
