Olive-Y Chicken Salad
Ingredients
2 cups cooked, diced chicken
1 cup cooked rice (ΒΌ cup uncooked yields 1 cup cooked)
1/2 cup sliced black olives
1/4 cup toasted slivered almonds
1/4 cup thinly sliced scallions
1 teaspoon salt or to taste
1/2 cup mayonnaise
2 tablespoons fresh lemon juice

Simple to make. . . packed with flavor! One of the things I like about this recipe is that you can substitute green pimento-stuffed olives, add more rice, use red onions instead of scallions . . . and have an equally flavorful salad. Don't be afraid to experiment! Dee
