Vodka Soda With Lavender Simple Syrup

Sometimes I'll have leftover simple syrup from making another recipe, in this case it was lavender simple syrup to pour over fresh peaches. Instead of discarding the simple syrup, I like to make drinks!

Ingredients

1/2 cup water
1/2 cup sugar
ice- enough to pack 2 pint glasses
4 ounces vodka
12 ounces soda water

Preparation

Combine water and sugar in a small saucepan over high heat and bring to a boil. Add dried lavender, reduce heat to low and simmer for 1 minute. Remove from heat and cool. * optional to strain lavender blossoms first. (I think they are lovely floating in my drink- but not everyone does).

Into each pint glass, add ice, 2 tablespoons lavender simple syrup, 2 oz. vodka and fill with soda water. Stir. Depending on your sweet scale, you may want more lavender simple syrup.
