Stir Fry Belacan Kangkung (Dried Shrimp Paste & Water Spinach)

- 400 grams kangkong
- 2 tablespoons vegetable oil
- 2 tablespoons dried shrimp paste
- 3 tablespoons chilly paste
- 6 shallots, peeled
- 4 cloves garlic, peeled
- 4 teaspoons belacan (dried shrimp paste), grilled
- 1 teaspoon sugar
- 0.5 teaspoon salt(optional)
Instructions
Step 1
Add dried shrimp paste, chilly paste, shallots, garlic, belacan, sugar, and salt (if using) into a mortar and pound or blend them until a paste forms. This is your belacan mix (Group A ingredients).
Step 2
Blanch kangkung in boiling water for 30 seconds. Immediately transfer it to a cold bath. Drain all the water and set aside.
Step 3
Heat vegetable oil in a wok. Add the prepared belacan mix (Group A) and stir quickly, then reduce the heat to medium. Continue to stir until the belacan mix is fragrant and slightly browned.
Step 4
Increase the heat to high. Add the blanched kangkung to the wok and stir briskly until it is slightly limp. Transfer the stir fry to a serving plate.
Step 5
Note: Add a little water if the dish is too dry for your liking. (The author prefers it dry and did not add water).
