Low Country Boil In One Pot

Ingredients

12 cups Water
1/2 pound smoked sausage
2 med. onions, peeled but don't remove stems, cut into quarters
3 ears fresh corn on the cob, shucked, cut into thirds
2 pounds fresh shrimp

Preparation

Add Old Bay to water and simmer

Add potatoes, sausage, onions and bring to simmer until potatoes are tender, about 15-18 minutes

Keep water at a slow boil, add corn and cook about 4-5 minutes

Add shrimp and cook until they become pink and opaque, about 3-5 minutes

Strain and throw on newspapers or large platter

Serve with fresh, crusty bread, cocktail sauce and lemon wedges.

Just because it's called Low Country Boil, which is associated with Charleston, SC area, doesn't mean you can't make it anywhere else. My cousin and I made this in Panama City Beach and it was perfecto!
