Sausage and Tortellini Soup

Ingredients

1 pound sausage in casings (I like the organic, spicy Italian chicken 1/2 onion (chopped)
4 carrots (sliced)
1 box DaVinci Multi Colored Tortellini (7 ounces)
Salt and pepper to taste

Preparation

Put large stock pot onto burner and heat to medium. Add chunks of sausage and cook til almost done. Add onion and cook 3 to 4 minutes more. Add chicken stock and bring to a simmer. Add dried pasta and cook 10 minutes. Add diced carrot and cook 5 minutes more. Throw in fresh spinach and remove from heat. Let sit a few minutes (covered) to cook the spinach. Add salt and pepper to taste.

I like to serve these with cheddar cheese biscuits! Yummy!
