Gran's Fruit Salad

Ingredients

6 apples (I like 3 Red Delicious and 3 Golden Delicious), chopped
4 oranges, save some zest, peeled and chopped
2 cups fresh pineapple or 1can pineapple chunks, drained (save the juice for sauce)
2 cups red seedless grapes, halved
1 cup chopped celery
Pineapple juice
1 cup raisins
1 to 2 cups coarsely chopped nuts (I like English walnuts)
Sauce:
1 lime and zest
1 tablespoon lemon juice
1/3 cup honey
Orange zest
½ teaspoon cinnamon

Preparation

Mix all ingredients (excluding those for sauce) together in a large serving bowl.

Squeeze the lime juice into a small saucepan. Add about a tablespoon zest each from the lime and the orange. (You can freeze the remaining zest for other recipes. I put it in a small sealed plastic bag.)

Add the lemon juice, honey, cinnamon and pineapple juice. I take a taste test to see if it needs more honey.

Heat to a boil, reduce heat and let boil for a couple of minutes to thicken just a bit. Cool and then pour over the mixed fruit. Stir gently to coat.

All amounts are approximate. You can adjust depending on the amount you need or to your family’s tastes. Sometimes I add a drained can of mandarin oranges if I happen to have them on hand. Every batch is an adventure.
