Puto (Filipino Steamed Rice Cake)

Ingredients

2 cups Rice Flour
2 large Eggs, beaten
2 tablespoons Baking Powder
1 1/2 cups Milk
1/2 cup Margerine, melted

Preparation

In a big mixing bowl, mix the flour, baking powder and sugar. Gradually add in milk, eggs and margarine until completely mixed together.

Pour the batter into the cupcake molds until nearly full.

Place the cupcake molds into a steamer basket. If you have multiple layers, place a cloth between the trays to avoid water drips. Put enough water to steam, and 1 tbsp of vinegar. Then steam for 20-25 minutes. After steamed remove from tray and mold then serve after the Puto has cooled to touch.

Whoops! I actually tweaked the recipe and used all milk instead of a combo of milk and water. So, just follow the recipe as is without water and just milk. I edited the recipe. Thanks for catching that!

I love it with cheese on top! :) yumm! so this recipe makes 7?

Well, I cut the recipe in half and made them in a mini muffin pan and it made like 22. They didn't have the consistency of the real puto. It somewhat had a texture like mochi and puto mixed together.
