Hot Weather Baby Back Ribs

Ingredients

2 1/2 pounds baby back ribs
Dry rub (I use Emeril's Essence)
1/2 cup water
1 tablespoon Liquid Smoke
Barbeque sauce of your choice.

Preparation

Rinse ribs.

Cut into two rib sets.

Place in glass or ceramic pan.

Sprinkle with dry rub and rub in.

Add water and Liquid Smoke.

Cover with plastic wrap, fold back one corner.

Microwave for 13 to 17 minutes per pound.

Turn dish every 10 minutes.

Pre heat broiler.

Cover broiler pan base with foil.

Spray rack with olive oil.

Place ribs on rack.

Baste with sauce.

Place under broiler until browned to taste.

Allow to stand for 5 minutes.

Gotta love baby back ribs! Also great when the weather/season won't cooperate with you and you're left with no choice but indoor cooking :-P

About

Created while living in an apartment where outdoor cooking is banned.
Too hot for oven cooking, and the broiler isn't on that long!
Could also be par-boiled and then broiled.
