Oven Fried Chicken Breasts
2 cups crushed corn flakes
cup finely grated Parmesan cheese
1 tablespoon dried parsley flakes, crumbled
1/4 teaspoon freshly ground black pepper
6 boneless chicken breasts, skinned and trimmed of fat
2 eggs, beaten
Vegetable oil spray
Preheat oven to 375 degrees F.
Combine the crushed corn flakes, Parmesan cheese, parsley flakes, and pepper in a medium bowl. Dip chicken breasts in the egg, then roll them in the seasoned cornflake crumbs, coating breasts on all sides.
Spray a baking sheet with vegetable oil spray. Place the coated chicken breasts on baking sheet and bake for 45 minutes.
