Pav Bhaji

Pav-4 (Pav (bread) to be roasted with an ample amount of butter)
Potatoes big finely chopped-3
Peas-1/2cup
Onion big finely chopped-1
medium Tomatoes finely chopped-2
Ginger and garlic paste-1tsp
Chilly powder-1tsp
Salt to taste
Lime juice-1tsp
Butter-3tbsp
Roast and finely grind to powder
Shahi Jeera-1tsp
Coriander seeds-1tbsp
Dry red chilly-2
Dry mango powder-1tsp
Cinnamon-1/2"
Black Cardamon-1
Fennel seeds-1tsp

Preparation

Heat butter in a pressure pan, add onions, potatoes, peas, ginger and garlic paste, tomatoes, chilly powder, turmeric and enough water.

Pressure cook until potatoes are done.

Add the ground masala to cooked potatoes and season with salt. 4.Mash the potatoes with a laddle, simmer for 5mins until the mixture thickens and butter floats on top. Serve Hot with Pav.

One of my street food favourites in Bombay. Have to admit the local Amul butter gives it the most flavourful - albeit salty - touch.
