Sadako's Kimpira Gobo - Fried Burdock Root

Ingredients

1 pound Gobo (Burdock Root)
1 tablespoon Oil
1 teaspoon Sesame Seed Oil
3 1/2 tablespoons Sugar
2 tablespoons to 3 Soy Sauce
2 tablespoons Sake
1/4 teaspoon Fresh pepper
1/4 teaspoon Togarashi Pepper
1 tablespoon Sesame Seeds, Toasted

Preparation

Peel gobo and wash to remove dirt. Slice in thin, diagonal pieces and cut into slivers to resemble matchsticks.

Soak gobo for 1/2 hour and rinses in fresh water

Always keep gobo in water or it will turn dark.

Drain Gobo

Add 1 bsp. Oil to wok and wtir fry on high heat for approximately 5 minutes. Add sugar, soy sauce and Sake (rice wine). Add a tsp. of sesame seed oil (optional) for flavoring. cook until liquid is almost evaporated.

Add pepper and mix. Remove to serving dish and garnish with sesame seeds ( if chirimen iriko is to be used, rinse fish first and add to gobo when adding pepper.)

Keep 1 week in regrigerator. Also good with 1 to 2 carrots, cut into match stick size and fried with gobo. Adds color and nutrition.
